My mom makes this dish with rice, but I today i am substituting the rice with bulgur. one of my friends does this all the time, since bulgur seems to be the healthier alternative. If you have not heard of bulgur, there is google and Wikipedia. Ok fine. Bulgur is a “cereal food made from several different wheat species, and originated in Middle Eastern cuisines”. Try both and see which one you prefer! This dish has a subtle taste and is full of fiber and protein and dill is known to lower cholesterol. So… you’re welcome 😀

Ingredients
- 1 cup bulgur
- 8 oz mushrooms, chopped
- 3/4 cup chopped dill
- 3/4 cup black eyed peas
- 1 TBS olive oil
- lemon juice - to taste
Instructions
- Cook the bulgur in water (with some added salt).
- While the bulgur is cooking place 1 tsp olive oil in a pan and add mushrooms. cook until the mushrooms give out water and it evaporates. Add chopped dill. Remove from heat.
- in a large bowl add cooked bulgur to the mushrooms. Drain peas and add to the bowl as well.
- Add the remaining of the olive oil plus salt and lemon juice according to your own taste.
- Can be served warm or cold or room temperature 😀
