I love recipes that are simple, with few ingredients. Not just because they’re easier to make and take up less time (let’s be honest, I got a LOT to do gurrrl! And so do you… probably) but also because I think simple, fresh ingredients and recipes made from scratch are the healthiest.
And this carrot soup definitely falls in this category. Literally: 4 ingredients. 5 if you count water!
Ingredients
- 1 lb carrots
- 2 TBS coconut oil
- 1 Tsp ginger, grated
- 1 lemon, juiced
Instructions
- Peel carrots and chop them up- it doesn't have to be into small pieces, just in half or so for each carrot
- Place in a pot and add some water and let cook on medium heat - about 20-30 minutes
- In the meantime you can grate your ginger and juice your lemon!
- After carrots are cooked and are soft remove from the pot and transfer to a blender. You can transfer the water as well.
- Add the coconut oil and ginger and blend until pureed completely.
- Start adding water in small amounts, beating after each addition, until mixture reached desired consistency (of soup, basically!)
- Now just add lemon juice and salt- amounts vary depending on taste. Enjoy!
