
Last week while I was yoga-ing at home and listening to water-stream meditation music my neighbor knocked on my door and offered me a box of home-grown tomatoes. (So sweet! -the neighbor, I mean). Those tomatoes were somethin’ man! So delicious I just ate half of them with a little sprinkle of salt alone. Then I thought about what I can make with tomatoes and VOILA! Tomato pieeeee
Ingredients
- 1 pie crust
- 1 cup cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup parmigiano reggiano cheese, shredded
- 1/3 cup chopped green onions, parsley and cilantro (or another combination of herbs you prefer)
- 1 TBS apple cider vinegar
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 egg, beaten
- 2 lbs tomatoes (for visual purposes you can use different colored and sizes of potatoes)
- 1 tsp cornmeal
Instructions
- Preheat oven to 400F.
- Slice the tomatoes and lay on clean paper towel. Sprinkle with salt.
- Mix all the other ingredients. Sprinkle the cornmeal to the inside of the pie crust. Pour half of the cheese mixture in the crust.
- Pat dry the tomatoes with clean paper towel. place half of them on the cheese layer. pour the remaining cheese mixture and arrange the rest of the tomatoes on the cheese.
- Place in oven and let bake for 40-45 minutes.
