My brother made a new friend recently and if you knew him you’d understand how exciting that is! It was this friend’s birthday a few days ago and, needless to say, I had to make cupcakes for this event 😀

I asked him to find out what his friend’s favorite flavor is and the results were chocolate and blueberry. At first I was like _ cuz you know, chocolate usually gets paired with raspberry or strawberry. But I went ahead and made these chocolate cupcakes with blueberry buttercream frosting and ya know what? Not too shabby!

Ingredients
Chocolate Cupcakes
- 1⅓ cup flour
- ¼ teaspoon baking soda
- 2 teaspoons baking powder
- ¾ cup unsweetened cocoa powder
- Pinch of salt
- ¼ cup softened unsalted butter
- 1½ cups white sugar
- 2 eggs, room temperature
- 1 cup milk
Blueberry Buttercream Frosting
- 1 cup blueberries (fresh or frozen)
- 2 tablespoons lemon juice
- 1½ sticks of unsalted butter, softened
- 2 ½ cups powdered sugar (more if needed), sifted
Instructions
Chocolate Cupcakes
- Preheat oven to 350 F. Prepare cupcake pan by filling in with cupcake liners and spray with oil.
- Combine the flour, baking powder, baking soda, cocoa powder and salt in a bowl and set aside.
- Cream butter and sugar in the bowl of your stand mixer. Add the eggs, one at a time and keep beating. Add milk.
- Add the flour mixture and combine gently until fully incorporated. Pour the batter into the cupcake liners and bake for about 18-20 minutes. These cupcakes are actually not very moist, but the rich buttercream frosting complements the texture of the cupcakes.
Blueberry Buttercream Frosting
- In a saucepan combine blueberries and lemon juice and stir over medium heat until it starts to simmer. As the blueberries soften gently smash them. Continue cooking until mixture thickens a bit.
- Remove from heat. After it cools down a little pour into a fine-mesh strainer over a small bowl and press with a fork or back of a spoon to get the juice out, leaving the skin behind.
- Set bowl aside. Beat softened butter in the bowl of your stand mixer for a couple of minutes, then add the blueberry puree and continue to beat. Add in the powdered sugar and once well combined beat on high-speed for another minute or two to make the frosting fluffy.
