I hate recipe blogs that go on and on and on and you have to scroll down a thousand times until you get to the recipe! I am not gonna be that person, so here goes: These muffins are the healthiest dessert you can find. They have oats, bananas and blueberries -> A lot of benefits including fiber and antioxidants. And they taste great, with a smooth texture of bananas mixed with the crunchiness of the oats.
Ingredients
- 2 large ripe bananas
- 1/2 cup sugar
- 1 large egg
- 1/4 cup vegetable oil
- 1/4 cup sour cream
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 1/2 cup quick cooking oats
- 1 cup blueberries fresh or frozen
Instructions
- Preheat oven to 375°F and line a 12-count muffin pan with paper liners.
- Mash bananas. In your mixing bowl beat sugar, egg, and vanilla extract until combined.
- Add vegetable oil and sour cream.
- Combine flour, baking powder, baking soda, cinnamon, nutmeg, salt, and oats. Gently stir into wet ingredients. Add the banana.
- Fold in blueberries.
- Divide batter between 12 muffin cups.
- Bake for 20 to 23 minutes or until a toothpick inserted in the center comes out clean.
